Ambalaj Kaplarının Balın Biyokimyasal Yapısına Etkisi

Abstract

Bu çalışma, ambalaj kaplarının balın kimyasal yapısına etkisini belirlemek amacıyla Niğde Ömer Halisdemir Üniversitesinde yürütülmüştür. Beşerli gruplar halinde 1 yıl süre ile bekletilen balların niteliklerini belirlemek için Serbest asitlik, pH, Kül, HMF, Biriks, Diastaz sayısı, Toplam Fenolik madde miktarı ve İnvert şeker içerikleri incelenmiştir. Plastik, Cam, Teneke ve Pet ambalaj kablarında bekletilen ve Kontrol gurubu balların ortalama serbest asitlik değeri 19,534±0.54 meq/kg, Ortalama pH değerleri 3,880±0.38 olarak belirlenmiştir. Grupların ortalama kül değerleri %0,13 olarak, ortalama HMF değerleri ise 15.518 ± 0.83 mg/kg, ortalama Diastaz sayısı değerleri ise 12.417±0.80 olarak belirlenmiştir. Gruplar arasındaki farklılıkları belirlemek amacıyla yapılan Duncan çoklu karşılaştırma testi sonuçlarına göre Serbest asitlik, pH, Kül, HMF bakımından gruplar arasındaki farklılık istatistiki olarak önemli (P=< 0.01) bulunurken Diastaz sayısı bakımından gruplar arasındaki farklılık önemsiz (P ≥= 0.05) bulunmuştur.Yapılan çalışma, oda sıcaklığında bir yıl süre ile çeşitli ambalaj kaplarında bekletilen balların yapısında istatistiki olarak önemli değişimlerin olmasına rağmen bu değişimin Türk Gıda Kodeksi bal tebliği ile AB stadartları içerisinde kaldığını bu nedenle güvenle tüketime uygun olduğunu göstermiştir.

This study was carried out at Niğde Ömer Halisdemir University in order to determine the effect of packaging containers on the chemical structure of honey. Free acidity, pH, Ash, HMF, Biriks, Diastasis, Total Phenolic Substance and Invert sugar contents were examined to determine the properties of the beverages which were kept in groups for 1 year. According to the obtained results, Average free acidity of all groups were determined as 19,534 ± 0.54 meq / kg and the average pH value was measured as 3,880 ± 0.38. The overall average ash values of the groups were determined as 0.13%. The mean HMF values of all groups were calculated as 15.518 ± 0.83 mg / kg. and the mean diastase number of all groups was determined as 12.417 ± 0.80. The differences between the groups was found to be statistically significant (P= <0.01) in terms of free acidity, pH, Ash, HMF according to Duncan multiple comparison test results. The difference between the groups was found to be insignificant (P ≥ 0.05) in term of diastase number. Results of this study showed that despite the significant changes in the statistical structure of the varieties of beverages kept in various packaging containers for one year at room temperature, the fact that this change is within the EU stan- dart and the Turkish Food Codex honey certificate indicates that it is safe to consume.
