Bioactivity of etoh and meoh extracts of basidiomycetes mushroom (stereum hirsutum) on atherosclerosis
(Razi Vaccine and Serum Research Institute, 2021) Sevindik, M.; Ozdemir, B.; Bal, C.; Selamoglu, Z.
Mushrooms are cosmopolitan organisms living on different substrates and have different pharmacological properties, such as antioxidant, antimicrobial, and anti-inflammatory effects thanks to many bioactive compounds. Edible and medicinal higher fungi have been used by humankind for millennia. They are collected and used directly not only for their nutritional values as a main source of food or as a part of a regular diet but also for their medicinal purpose as a source of powerful new bioactive compounds. Antioxidative and anti-inflammatory functions and therefore lipid-lowering effects correlate with antiatherogenic effects. This study determined the total antioxidant capacity (TAS), total oxidant capacity (TOS), oxidative stress index (OSI), 1- diphenyl-2-picrylhydrazyl (DPPH) activity, and antimicrobial activity of ethanolic and methanolic extracts of Stereum hirsutum (Willd.) Pers. Moreover, the effects on atherosclerosis are discussed according to the antioxidant activity of the mushroom. The TAS, TOS, and OSI values of S. hirsutum were determined using Rel Assay kits. According to the results, the TAS, TOS, and OSI values were determined at 5.289±0.113 mmol/L, 20.540±0.416 ?mol/L, and 0.389±0.012. Furthermore, free radical scavenging activity was determined by the DPPH method. The ethanol (EtOH) extracts of S. hirsutum showed higher DPPH activity than methanol extracts. The EtOH extracts at a concentration of 2 mg/mL showed a DPPH inhibition of 45.84±0.81%. Antimicrobial activities were tested on 9 standard bacterial and fungal strains, including Staphylococcus aureus, S. aureus MRSA, Enterococcus faecalis, Escherichia coli, Pseudomonas aeruginosa, Acinetobacter baumannii, Candida albicans, C. krusei, and C. glabrata using a modified agar dilution method. Extracts showed high activity against S. aureus, S. aureus MRSA, and A.baumannii. In conclusion, it was suggested that S. hirsutum can be used as a natural source related to the effects on atherosclerosis due to its antioxidant and antimicrobial activities. © 2021 Razi Vaccine and Serum Research Institute. Potential of phytase supplemented moringa oleifera leaf meal based diet on mineral digestibility of oreochromis niloticus fingerlings
(Green Wave Publishing of Canada, 2020) Sarfraz, Q.; Hussain, S.M.; Sharif, A.; Selamoglu, Z.; Bashir, F.; Ahsan, S.
This current study was planned to evaluate effect of exogenous phytase supplementedMoringaoleifera leaf meal (MOLM) diet on mineral digestibility of Oreochromis niloticus fingerlings. To conduct the experiment, six experimental diets based on MOLM with 0, 200, 400, 600, 800 and 1000 FTU kg-1 phytase level wereformulated. Chromic oxide (1%) was added in the feed as indigestible marker. Completely Randomized Design (CRD) with three replicates was adopted to accomplish the experiment. Stocking density in each V-shaped triplicate tank was 15 fingerlings; fed at the rate of 5% of live wet weight. Results predicted that the fish group fed MOLM based diet supplemented with 600 FTU kg-1 phytase showed highest Apparent Digestibility Coefficient (ADC) % of minerals and minimum quantity was discharged through feces. Hence, to release chelated minerals in MOLM, phytase at the level of 600 FTU kg-1proved very effective.By viewing above results, it became clear that phytase supplementation to MOLM based diet is helpful in formulation of cost effective and environment friendly feed forO. niloticus fingerlings. © 2020, Green Wave Publishing of Canada. (Iranian Fisheries Science Research Inst-Ifsri, 2017) Dastan, S. D.; Gulhan, M. F.; Selamoglu, Z.; Dastan, T.
The aim of this study was to investigate the effective concentration of ethanolic extract of bee pollen on liver, spleen and heart tissues of fish. Bee pollen extract in various concentrations (0.5, 2.5, 5, 10, 20 and 30 ppm) was administered to fish for 96 h under aquarium conditions. The malondialdehyde (MDA) levels, total antioxidant status (TAS), total oxidant status (TOS), oxidative stress index (OSI) and levels of total free sulfhydryl groups were investigated in liver, spleen and heart in fish samples. MDA levels in liver, spleen and heart tissues of various concentration groups (2.5, 5, 10, 20 and 30 ppm) decreased (p<0.05) compared to the control group. The highest value of TAS (P<0.05) and the lowest value of TOS (p<0.05) occured in liver and heart tissues of 10 and 20 ppm concentration groups. The lowest levels of OSI were recorded in liver and heart tissues of 10, 20 and 30 ppm concentration groups compared to control group (p<0.05). The highest values of total sulfhydryl groups were recorded (p<0.05) in all tissues of 10 and 20 ppm groups compared with that in the control group. Finally it was observed that in liver, spleen and heart tissues of fish, the antioxidant effects of ethanolic extract of bee pollen depended on concentrations.

Treatment of biosorption and ozonation on elimination of the day pollution in treated water
(Green Wave Publishing of Canada, 2020) Mir Khan, U.; Selamoglu, Z.
Textile wastewater is characterized by strong color, saturation of unfixed dyes and their residues, and organic and inorganic chemicals, such as bleaches, detergents, optical brighteners, fixing, sequestering and finishing agents, carriers, surfactants, equalizers, It is characterized by consumption of high amount of water and production of large volumes of wastewater from various processes, such as dyeing, printing, finishing, The wastewater treatment methods are broadly categorized as physical, chemical and biological. The integrated processes including some combinations of three treatment classes are mostly employed to remove color from dye contaminated effluents and comply with severe regulations. This review revealed that a combination of biosorption followed by ozonation might more efficient in terms of time, cost and toxicity reduction than separately using these processes. To compensate the negative points of both the processes, combined treatment of biosorption followed by subsequent ozonation have been implied. The treatment of ozonation has been increasing for the decolorization of textile dyes, the main disadvantage of this way of apply being related to the by products, which can have toxic and carcinogenic actions. The other disadvantage related to ozonation is its cost and time taken by ozonation. On the other hand, biosorption is a cheap process for the treatment of textile dyes, but it is less efficient in removing dyes as compared to ozonation at higher dye concentrations. It can be suggested that a combination of biosorption followed by ozonation might more efficient and effective for the decolorization of textile dye and to reduce the toxicity of ozonation process. © 2020, Green Wave Publishing of Canada. Use of enzymes in dairy industry: A review of current progress
(Razi Vaccine and Serum Research Institute, 2020) Mir Khan, U.; Selamoglu, Z.
This review paper aimed to provides precious information about the function and use of different enzymes in dairy food applications. An enzyme is called a protein and catalyzes a specific reaction. Every enzyme is intended to initiate a particular reaction with a specific outcome. Moreover, numerous enzymes are present in the human body. Dairy food applications include the use of different enzymes, such as protease, to lessen the allergic properties of bovine milk products and lipase to improve the flavor of the cheese. Caseins, which are acid-soluble, are free from a flavor and can be suitable for addition to beverages and acidy foods by the limitation of proteolysis. The hydrolysates of casein are better to use in foods based on milk proteins for newborn children with allergy to bovine milk. Lipolysis makes a significant role in the flavor of Swiss cheese. The peppery flavor of Blue cheese is produced by short-chain unsaturated fats and methyl ketones. Many minor enzymes with limited application in dairy processes are sulphydryl oxidase, lactoperoxidase, glucose oxidase, catalase, lysozyme, and superoxide dismutase. Both catalase and glucose oxidase are utilized in food preservation processes. The scope minor enzymes in milk products needed for better production of dairy products and for the future of dairy technology. The worldwide market for the production of microbial enzymes used in dairy products processing is impressively increasing; however, there are a limited number of enzymeproducing industries in the market. The production of proteinase, lactase, lipase, and microbial rennet is increasing in the laboratory and small scales. In near future, the need for these enzymes will be undoubtedly significantly increasing essentially due to the requirement of significant nutritional valuable dairy products in the country to overcome malnutrition and obesity and shift toward low-fat and healthy foods. © 2020 by Razi Vaccine & Serum Research Institute.

Zooplankton and their protective effects on cardiovascular diseases
(Green Wave Publishing of Canada, 2019) Ozaltun, B.; Selamoglu, Z.
In the world-wide cardiovascular diseases are the most common. And mortallities are high. Many modifiable and non-modifiable risk factors for cardiovascular diseases have been identified. One of them is diets. In diet polyunsaturated fatty acids such omega-3 and omega-6 have protective effects on cardiovascular health. Polyunsaturated fatty acids are essentials for humans, have taken from foods. Fish and fishkind productions have polyunsaturated fatty acids. Polyunsaturated fatty acids are synthesized by zooplanktons and pytoplanktons. In food chain Zooplanktons have important place. Zooplankton is the nutrients of fish. Fishes constitute the store of polyunsaturated fatty acids for people. We see how important zooplanktons are in the first steps of the food chain for humans. © 2019, Green Wave Publishing of Canada.
