The research was carried out to determine the effects of adding grape pomace to Japanese quail (Coturnix coturnix japonica) compound feed on performance, carcass parameters and meat quality. At the end of the study, while the groups with 1% and 2% additives were generally affected positively in terms of feed consumption, live weight, live weight gain and feed efficiency rates, the other groups did not have an effect of grape pomace on the investigated values. (P<0.05). When the carcass parameters were examined, there was no significant difference between the carcass values, while the groups with 2% and 4% grape pomace addition were found to be higher in weight in terms of breast and back ratio. (P<0.05). The levels of thiobarbituric acid (TBA), pH, peroxide and total psychrophilic bacteria were found to be lower in the grape pomace added groups compared to the control group. (P<0.05). It was concluded that the addition of grape pomace as an additive to quail diets has a significant effect on both the performance of quails and the shelf life of meat. Grape pomace is an agro-industrial by-product with high nutritional value and a rich source of polyphenols. It was concluded that grape pomace can be used as a natural additive to replace synthetic antimicrobials and antioxidants up to 4%.
