Food safety consciousness and purchasing behaviour of consumers for milk and dairy products in urban area of Nigde

Özet
Bu çalışma, tüketicilerin süt ve süt ürünlerine yönelik gıda güvenliği bilincini ve satın alma davranışlarını incelemek amacıyla yapılmıştır. Çalışmanın birincil verileri, Niğde ili kentsel alanda ikamet eden 272 tüketiciden yüz yüze anket yöntemi ile toplanmıştır. Çalışma sonucunda görüşme yapılan tüketicilerin ayda ortalama 13,5 litre süt, 3 kg peynir, 10,5 kg yoğurt ve 1,5 kg tereyağı satın aldıkları belirlenmiştir. Tüketicilerin %82'sinin gıda güvenliği kavramını bildiği, gıda güvenliği denetleme kuruluşları olarak Tarım ve Orman Bakanlığı ve Sağlık Bakanlığı'na aşina oldukları görülmüştür. Tüketicilerin süt ve süt ürünlerini öncelikle süpermarketlerden aldıkları, süpermarketten sonra doğrudan üreticiden aldıkları tespit edilmiştir. Araştırmada tüketicilerin süt ve süt ürünleri satın alırken satın alınacak ürünün doğallığı ve kalitesi en önemli kriter olarak gördükleri sonucuna ulaşılmıştır.
This study examined consumers' food safety consciousness and purchasing behaviour for milk and dairy products. The data was gathered through the application of a questionnaire developed for food safety in milk and dairy products and purchasing preferences to consumers via face-to-face questionnaire method with 272 consumers residing in the urban area of Nigde province. As a result of this investigation, the milk and dairy products purchased by the majority of consumers were reported, such as cow milk, cow milk products and butter. It was determined that consumers buy an average of 13.5 liters of milk, 3 kg of cheese, about 10.5 kg of yogurt, and 1.5 kg of butter per month. It was found that 82% of consumers know the concept of food safety, and they stated that they were familiar with the Ministry of Agriculture and Forestry and the Ministry of Health as the food safety supervisory organizations. It was determined that consumers primarily buy milk and dairy products from supermarkets; furtherly, they buy directly from the producer after the supermarket. In the study, it was concluded that consumers consider the good for the product's naturalness and quality to be purchased as the most important criterion when purchasing milk and dairy products.
