Özet
Yapılan bu çalışmanın amaçları termiyenin geleneksel acılık giderme yöntemine alternatif bir uygulama geliştirmek, daha kısa sürede acılığı giderebilmek ve acılık giderme işleminde optimum koşulları belirlemektedir. Geleneksel acılık giderme yönteminde termiyedeki minimum toplam alkaloit miktarı ortalama 6,42 gr/100gr iken ultrases destekli ekstraksiyonda minimum toplam alkaloit miktarı 5,64 gr/100gr'dır ve utrases gücünün etkili olduğu bulunmuştur. Alternatif yöntemle elde edilen protein değeri maksimum 4468 mg/100gr olarak bulunmuş ve bekleme süresi etkindir. Antioksidan aktivite değeri (% inhibisyon) %36,94'ten %39,90 'a çıkarılmıştır ve alternatif yöntemle elde edilen maksimum antioksidan aktivite değeri ultrases güç, ultrases sıcaklığı etkin rol oynamıştır. Alternatif yöntemle bulunan toplam fenolik madde miktarında ultrases güç, ultrases sıcaklık ve bekleme süresi etkin olmuştur ve 2901,09 mgGAE/kg'dan 3247,36 mgGAE/kg'a çıkmıştır. RSM yöntemiyle deneme tasarımı oluşturuldu ve bulunan değerlere bağlı olarak optimum koşullar ve bu koşullarda teorik ve deneysel değerler bulunarak uygunluk durumu değerlendirilmiştir.
The aim of this study is to develop an alternative application to lupine's traditional debittering method, to eliminate bitterness in a shorter time and to determine optimum conditions in debittering process and it is used as raw material in this term. In the traditional bitterness removal method, the minimum total alkaloid amount in the lupin is 6,2 gr/100gr, while the minimum total alkaloid amount in the ultrasound assisted extraction is 5,64 gr/100gr, and it is found that the utrases power is effective. The protein value obtained by the alternative method was found to be maximum 4468 mg/100gr and the residence time was effective. The antioxidant activity value (% inhibition) was increased from %36,94 to %39,90 and the maximum antioxidant activity value obtained by the alternative method played an active role in ultrasound power, ultrasound temperature. In the total amount of phenolic material found by the alternative method, ultrasound power, ultrasound heat and waiting time were effective. Increased from 2901,09 mgGAE/kg to 3247,36 mgGAE/kg. Experimental design was developed by RSM method and optimum conditions were determined according to the values found and the suitability status was evaluated by finding the theoretical and experimental values under these conditions.
