KİNOA TOHOMU (Chenopodium quinoa Willd.) EKSTRAKTININ JAPON BILDIRCINLARINDA PERFORMANS, KARKAS ÖZELLİKLERİ VE ET KALİTESİ ÜZERİNE ETKİLERİ

Özet
Bu çalışma kinoa tohumu (Chenopodium quinoa Willd.) ekstraktının bıldırcın yemlerinde katkı maddesi olarak kullanımının performans, karkas özellikleri, et kalitesine etkilerini incelemek için yürütülmüştür. Araştırmada 400 adet günlük bıldırcın civcivleri 4 deneme grubuna ayrılmış ve her deneme grubu da her tekerrürde 25 adet bıldırcın civcivi içeren 4 tekerrürden oluşturulmuştur. Araştırmada ticari yem kullanılmış ancak karma yeme 0, 0.1, 0.2 ve 0.4 g/ kg düzeyinde kinoa tohumu ekstraktı katkısı uygulanmıştır. Deneme süresince (0-5 hafta) en fazla yem tüketimi katkılı gruplardan elde edilmiş (P<0.05), bu dönemde canlı ağırlık kazancı ve yemden yararlanma oranları gruplar arasında farklılık göstermemiştir (P>0.05). Karkas randımanı, but, göğüs sırt ve boyun oranı ile iç organ oranlarının katkılardan etkilenmediği belirlenmiştir (P>0.05). Gruplarda göğüs etinin +4 °C'de 0, 1, 3, 5 ve 7 gün depolanması sonucunda pH, tiyobarbütirik asit, peroksit ve toplam psikrofil bakteri sayısının kinoa ekstraktı katkılı gruplarda kontrol grubundan daha düşük olduğu belirlenmiştir (P<0.05). Sonuç olarak kinoa tohumu ekstraktının bıldırcınların performansı ve etin raf ömrü üzerine önemli etkisinin olduğu ve etin lipit oksidasyonunu engellemek veya geciktirmek amacıyla kanatlı karma yemlerinde kullanılabileceği belirlenmiştir.
This study was conducted to determine the effect of quinoa seed (Chenopodium quinoa Willd.) extract on performance, carcass parameters and meat quaility in quails. In this study, 400 quail chicks were divided into 4 experiment groups and each experiment group consisted of 4 replicates containing 25 quails in each. Commercial feed was used in the study but 0, 0.1, 0.2 and 0.4 g/kg kinoa seed extract was added to the compound feed. During the experiment period (0-5 weeks), the highest feed intake was obtained from the supplemented groups (P<0.05), body weight gain and feed conversion efficieny did not differ between the groups in this period (P>0.05). Carcass yield, thigh, breast, back and neck ratio and internal organ ratios were not affected by the supplementation (P>0.05). As a result of storage of breast meat at +4 ° C for 0, 1, 3, 5 and 7 days, it was determined that the number of pH, thiobarbutyric acid, peroxide, and total psychophilic bacteria were lower in the groups with quinoa extract than the control group (P <0.05). As conclusion, it has been determined that quinoa seed extract has a significant effect on the performance of quails and shelf life of meat and can be used in poultry feeds to prevent or delay lipid oxidation of meat.
